I finally created a gluten-free brownie that is pretty good. I'd like it a bit fudgier, and I'll try to tweak the recipe for that, but it's denser than cake. Perhaps cutting the cooking time by 4 minutes would help. I don't think the flour mix will matter much, but mine is mostly rice flour and corn starch, with a bit of xanthan gum and buckwheat flour.
Raven's Gluten-Free Brownies
3/4 cup gluten-free flour mix
1/2 cup white sugar
1/4 cup cocoa
2 large eggs
1/2 cup butter (1 stick), melted
1 teaspoon vanilla extract
In a bowl (at least, that works for me) mix the dry ingredients.
In another bowl, stir together the liquid ingredients.
Mix the liquids into the solids.
Pour into a greased, 4 1/2 x 8 1/2 inch bread pan.
Bake 30 minutes at 350 degrees farenheit.
